 Leavening is used to make our food more appealing and easier to eat. We will investigate various aspects of leavening chemicals and processes. Materials and suggested experiments will help us address these questions: Which is best for a certain food dish, and why? Can one leavening agent be substituted for another? What are the practical limits to this kind of substitution?
